What does reconstituted vegetable juice mean ? It means that the juice has been heated to a high temperature and then cooled down to room temperature again. This process causes some of the nutrients in the vegetables to break down into smaller particles. These are then filtered out, leaving you with reconstituted vegetable juice.
The reason for this is because heating and cooling the vegetable causes it to become more stable and therefore last longer. It also makes it easier for mass production which is why this method is used by most manufacturers today.
There are some benefits to reconstituting your own juices at home however:
You can avoid preservatives or added flavourings that are not listed on the label. You may also be able to find organic versions which will ensure there are no pesticides or other chemicals present in your drink.
You can choose exactly how much sugar or salt you want in your drink as well as changing its colour by adding fruit or spices if desired!
